Avocado & prawns
For two people:
Extra virgin olive oil
Sea salt
Freshly ground black pepper
2 x 225g of cod fillets, skinned and pin-boned
1 small handful of fresh basil, ripped
1 avocado, peeled, stoned, halved and sliced
150g peeled prawns cooked or raw
140ml of double cream
150g of (good) (grated) cheese (cheddar or emmental…)
Preheat the oven to 220°C / 425°F / gas 7.
Rub a baking dish or roasting tray with a little olive oil.
Season the cod on both sides and place in the dish.
Sprinkle the filets with the basil, avocado and prawns.
Drizzle over the cream and grate over the cheese.
Cook at the top of the preheated over for 15-20 minutes until golden brown.
Season to taste with sea salt and pepper.
Serve with a green salad.
