Courgette or Zucchini salad
For 4 people:
4 courgettes or zucchini
1 red chili
½ clove of garlic
Sea salt
Ground pepper
Virgin extra olive oil
Lemon
Mint or coriander
Slice the courgettes lengthways as thin as possible.
Grill the slices until slightly brown on each side.
Scatter the slices over a large plate.
Sprinkle them with a little sea salt and freshly ground paper.
Deseed the red chili and chop finely.
Chop the garlic.
Sprinkle the chili and garlic evenly over the sliced courgettes.
Drizzle with olive oil and a squeeze of lemon.
Tear over fresh mint or coriander.
