Penne alla caprese
Preparation time = 25 minutes
Ingredients for four:
350g Penne
500g tomato pulp
2 anchovies
½ onion, sliced
150g mozzarella cheese, diced
10 large olives
1 tbsp chopped parsley or basil
3-4 tbsp extra-virgin olive oil
Salt
Pepper
1 chili pepper
Briefly brown the onion in the oil with the anchovy and chili.
Add the tomato and cook for about 15 minutes.
Add the stoned olives and season with salt and pepper.
Cook the Penne in plenty of boiling salted water.
Drain and toss with the sauce, the mozzarella and the basil leaves cut into thin strips.
Combine well and serve.
